I have to say that it was somewhat fate like when I felt the urge to release my culinary wizardry on the world, and I stumbled upon this:
By simply typing the words "moist lemon cake" into my search engine I found a cake that called to me! A lemon cake, that claims to be moist, with my name on it! Obviously the only explanation is that destiny wants me to make this cake...and I did...oh my how I did....
Adapted slightly from the original recipe "Mrs Verney's moist lemon cake" (click for link)- please find below the key to my success:
150g caster sugar
150g self-raising flour
1 level teaspoon bicarbonate of soda
2 large eggs
Grated rind of 2 lemons
75ml soya milk (normal milk is good also)
MIX ALL THE INGREDIENTS TOGETHER AND PLACE IN A GREASED CAKE TIN, TO BAKE IN A PREHEATED OVEN FOR 30-45 MINS (or until a clean piece of cutlery poked in it comes out clean)...MEANWHILE....
Dissolve 3 tablespoons of sugar in the juice of the lemons that you grated for the cake. Heat until starts to bubble.
Also make some runny icing out of icing sugar, water and a dash of lemon juice.
When the cake is done (TA DA!- you will say- for it will be awesome) skewer the cake in several places and pour the syrupy sauce on it....
Once cooled, pour some icing on it, wait for it to settle and serve.
YOU ARE NOW A DOMESTIC GENIUS...it is official...and you will prance and dance in merriment and adoration.
